Ham bone recipes

After easter we have this ham bone from a honey ham left over (still has quite a bit of meat). I know you can make soups and stews from these but I have never done done it. Any good suggestions?
 
Take about 3/4 C chopped celery, bell pepper plus 1 1/2 C onion and 6-8 cloves garlic. Sweat/saute w/ equal parts olive oil and butter on med/low heat for roughly 20 mins. Add the ham bone and equal parts water and chicken stock. Bring to boil. Reduce heat and add 1 whole pkg of soaked, large butter beans or LARGE limas. Reduce heat and season to taste. Simmer on low for about 2-3 hours. Remove the bone and scrape the meat off the bone w/ the back of a chef's knife. Add to pot. Make some cornbread. Enjoy!
