Halp.. Pork spare ribs; no grill

Wife picked up bunch of pork spare ribs for Thanksgiving. (We're going to Nashville tomorrow for the real thing.) Well, we can't use the grill because it's pouring outside. Is their a way or a recipe to cook them in, say, a cast-iron skillet? I'm assuming that, since you can cook anything else in one, there's got to be a good way to cook the ribs in it.

You should probably, gulp, bake those ribs. It needs indirect heat which you will not find in a skillet. You could probably braise them too but I would be worried about a greasy mess.

They need to be able to drip so put them on a rib rack in the oven or roasting rack. Use your normal rib rub on them and bake at 350 for an hour, wrap in foil for 1-2 hours and then unwrapped until crisp - maybe another 30 minutes? They should basically be cooked, but still very moist, when they come out of the foil.

Best of luck to you.

An Italian version.

Cut them into individual ribs, brown in some peanut oil, salt and pepper them, then add slices of 2-3 cloves of garlic and cook until they begin to brown. Add 3 Tb dried sage and a cup and a half of dry white wine. Cover and cook in the oven or on the stove for 45 minutes or so, until done.
