Well, I finally cooked a meal and took pictures...
Inspired by a gumbo thread on here a long time ago, I decided to make Gumbo Ya Ya...
That's right...no ******* okra...
Now that THAT detail is out of the way, here was last weekend's meal...
First, boil yourself up some chicken with ongyun (as my west TX wife pronounces it), celery, bay leaves, S&P and cayenne pepper...
Then, get the roux going....
The recipe calls for equal amounts of veg oil and flour, so, like a lemming, I conform...it's DAMN good on the back end...but, next time...I'm making a butter roux...maybe...
So, here we go...
My wife was nice and stirred it....I probably owe her something now....
But, she did a fantastic job....
I had to tell my daughter it wasn't really melted chocolate...right after I let her taste it....
I'm not a good father, am I?
Now, it's time to throw the trinity and sausage in the pot...
Mmmmmm....all sauteed and stuff.....or whatever you call it when you try to saute stuff with roux...
I call this part "the base"...
Now back to the chicken...
I won, it lost...
And the strained stock is ready to go in the pot...
We're getting close now...
The stock and the base get married....
Barn cats gotta eat, too...
Now, because that last pic was gross (unless you're a barn cat), here's the sausage...I used Gerik's German sausage that I bought in West, TX (not the same west TX that my wife came from)..
And now everything's together finally....
And the grand finale....
My bowl...screw wiping it clean for presentation...it's only 2 seconds away from a sudden death...
