Baked jalapeno cheese grits are a staple at my house.

What are some other things that I can do with grits besides kissing them?
 
I love cheese grits with jalapeno or green chile peppers. I often add some crumbled bacon.
I grew up on fried grits for breakfast, something I have fouind most people to be unfamiliar with.

Fried Grits


Refrigerate the just cooked grits, plain or cheese variations, into 1lb loaf pans (about 4.5" x 8.5") . Fill the pan to anywhere between 1'-2" deep in the pan. Cover and let it set well overnight or for a couple of hours.

Turn the pan upside down on a cutting board and shake your brick of grits out. Slice it into 4.5" planks about a 1/4" thick and then dredge both sides in seasoned flour (black pepper, a little cayenne & kosher salt does good). You can use a milk & egg wash to dip them (or double dip) in first if you prefer a heavier crust.

Fry them in a skillet with about a 1/2 cup of oil (i like peanut or canola) over medium heat (300-350) turning once until they are golden brown. Drain on paper towels then serve. You will fall in love with grits all over again.
 
I like yellow grits. I grew up eating yellow "quick grits", which are better than instant grits, which taste like ***. They quit making them, so mom orders real yellow grits for both of us from somewhere in Virginia. I actually prefer the quick grits because they are smoother. Either way, I prefer the worst yellow grits I've had to the best white grits I've had. I just cook them on the stove top, with butter and I use garlic salt when it calls for salt. I'm not sure what was quick about quick grits, because they take the same amount of time to cook. I'll throw in some chunks of cheese for flavor. Good with what ever meat is available, bacon, sausage, ham.

I've had fried grits once and wasn't that impressed. I'd just as soon eat cornbread as fried grits. We never had any leftovers to fry in our house. But I know a lot of people who like fried grits, so I guess it's a matter of taste.
 
Stan, your first post hit basically everything I was going to say about grits.

Baked grits however are also awesome:

Take regular prepared grits and throw in chives, bacon and some garlic salt. Let chill in the refrig for 10 mins or so and then spread in a baking pan. Bake at 400 for 12-15 minutes... you wont be sorry!
 
My favorite breakfast. Grits w/ lots of butter and salt, 2-3 fried eggs, crumbled up biscuits and bacon, sausage or ham. Piled all together until it's almost falling off the plate. Mix it together and enjoy.
 
shrimp and Grits

put some Olive Oil in a pan with some garlic and diced Bermuda onion, cook that **** up, add to grits. very popular in South Carolina
 
Damn, those sound good, 12thSS...one question...gulp...how does one make homemade grits?

Sorry. the only kind I've ever made for myself are instant...and my wife can't cook for ****.

My husband and I share our grits and hash browns when we eat out for breakfast. One orders hasbrowns and the other orders grits. Put grit on stop of your sausage, hash browns on top of the grits, and cream gravy on top of all of it.

It is too rich to eat every day, but is a real treat when you eat out. We do not eat at places that do not offer hash browns, grits, and gravy with their breakfast.

I also discovered grit bricks when i put some leftovers in the fridge one day. Have you ever tried a slice of grits brick pan fried on both sides topped with good chili and cheese, and an egg over easy on top? makes for a good breakfast
