grilling uncooked sausage

So I took a trip down to the Whole Foods HQ and picked up some uncooked garlic onion venison sausage (sounded too good to pass up). I've never cooked uncooked sausage... About how long at what temp should I go for? I plan on doing them on the Big Green Egg to add some smokey flavor, should i lay down some foil or just let them rest on the grill grate?

Sausage is pretty forgiving. You can cook it fairly quickly on medium high heat or smoke it at 250F for hours. To me, the best way to tell if it is ready is to try to break a link in two. When it breaks easily it is done enough to eat but it can be left on longer as long as it is not directly over high heat.

I'm insulted that you did not ask me personally. I will now be drinking more this weekend to help wash away our friendship. PS. are we going out on Friday, and what are our Nebraska plans?
 
If you're going to grill them, you can do them direct (maybe using a raised grid to reduce flare up potential). If you're smoking, I'd do them at 250-275 using a plate setter (and wrap it in foil to make clean up easier). Either way, I think they'll turn out pretty good.
 
I would add that if you choose to cook it over a higher heat that you need to be on the lookout for grease flareups or even an all out grease fire. I prefer slower cooking/smoking to render out more of the fat, but that's because I like lean sausage.
 
I decided on cooking it over direct heat on the Big Green Egg. Threw on a couple oak logs, 350 for ~20 min... Fantastic. Very very good. I definitely recommend trying those Whole Foods sausages. In fact, I'll probably wake up early on Saturday and buy a few to smoke/grill for the game.
