Grilled Mahi Mahi

I would like to grill some Mahi Mahi tomorrow night. What do I need to know. Does anyone have any good recipes?
 
i went to the HEB last night and got 4 filets. Im going to try the Macadamia nut crusted one from above. That one really got my mouth watering. Im cooking it tonight.
 
i jsut seared some mahi tonight, and made up a simple orange beurre blanc to go with it. turned out really great in its simplicity.
 
Your story is better than mine scottsin. I went to Kroger on Sat. and was going to buy Mahi Mahi on sale. Their "fresh" sale items looked bad and the guy told me that the fish came in on Thurs. I bought frozen instead and cooked it spicy, mexican style similar to one of the above recipes. My wife wouldn't eat it because the fish tasted fishy. I agreed.

It must have been really bad fish to still taste fishy after all the ancho chile and chile de arbol rubbed into it. I am not sure what lesson I learned, though. Always buy fish from a fish market or Costco/Sam's or always marinate in orange juice to remove the fish smell no matter the recipe. Opinions?
 
if you are not going to marinate, you need to let the fish sit out after thawed for a while to air out that fishiness, if necessary.

the orange beurre blanc i made with it was a first for me, and it really came off good.
 
FYI--Mahi mahi- is fishy aka dorado aka dolphin

I've had it not impressed mush-- beats hard head barely

in that order
once I was at Kroger and dorado was 4.99 a lb and mahi mahi was 6.99 a lb== one guy was about to buy mahi mahi--I told him to buy the dorado--same fish and got a an evil look from the employee-- he said they are not--- I said he was full of **** and told him to show me a picture of each fish alive-- he balked
 
I'm making the Mahi Mahi in Green Salsa recipe tonight. Whole Foods did not have 1 1/2 lbs. of Mahi Mahi so I decided to split the recipe and use 3/4 lbs. of Mahi Mahi and 3/4 lbs. of Atlantic Salmon. Looking forward to it. Will serve with a light bodied red wine (Chambourcin).

A lot of people do not know that Dorado and Mahi Mahi are the same fish. When I lived in Texas, a group of us would go to Cozumel and fish for Dorado. For every Dorado we caught, we would catch 3 Barracuda's. We would save one Dorado for ourselves because the hotel would grill it for us and the other fish went to the boat guys. They like Barracuda for some reason.

Tried the Mahi Mahi and Green Salsa recipe with Mahi Mahi and Salmon. I liked the salsa with the Salmon much better and I'm not a fan of Salmon, maybe because of the stronger flavors.

Because of the heat during the summer, I try to eat a lighter and healthier. If anyone has more fish and shrimp recipes, please post?

What's the best way to cook fish fillets on a grill?
 
I pretty much always just bake fish. It's easy and hard to screw up.

If I'm having fish I usually go one of three ways, all pretty simple

For tuna and salmon I use a soy, honey, wasabi sauce based on something I saw on Good Eats.

For whitefish like cod, I'll usually glaze them with a honey mustard sauce then halfway cooked I'll add breadcrumbs and parmesan.

Sometimes I just make a simple butter, vinegar, onion sauce for fish or scallops (probably my favorite seafood)
 
As far a grilled fish-- I would grill reds, shark or mahi mahi about like salmon-- marinate w/ olive oil and favorite rub--hard to mess up--don't over cook ( these are firmer fesh and come off the grill)- even lemon pepper is nice

softer fish-- trout, tilapia, cod-- wrap in foil to grill-- butter or olive oil and vegies-- tomatos, onion, even asparagus or brocoli

pan fried--olive oil -- cook high temp-- tony's low salt, cover w/ whatever,, shrimp creole or HEB jar of fast gumbo mix

I grill fish all summer long -once in a while I will fry w/canola-- secret recipee-- dip filet in mustard and louisiana hot sauce, lemon pepper then corn flour-- fry hot and fast --when they float up--get them out

My favorite is grilling salmon-- dash is good, cracked pepper can do the trick-- I adjust spices to go with the rest of the meal

However--If you have left over grill salmon-- warm it the next morning and serve an over easy egg on top--- great stuff
 
Man, I love Barracuda, and I've never had it in the states. In fact, I've never even eaten it indoors. The last time was on the beach at Isla Contoy in 1999, and the fish had been dead for about 15 minutes before I ate it.

Roy's has Barracuda? I'm going to Roy's.
