Grilled Chicken Sandwich

I made one for me and Mrs. texashorne last night, it was awesome. sorry no pics.
Being with the organic trend;
I used Ezekiel brand sprouted hamburger buns, I think they taste better than regular buns.
Raw Jack cheese, got it at whole foods as well. Had to slice it myself.
Red onion
Avacados
Tomatoes
Mustard
Try Me brand Tiger Sauce (a good mix of sweet and hot)

First, I grilled the chicken in the cast iron skillet that i have never washed with soap..
Next I sliced all the fixins, and mixed up the avacodos guac style with only some salt and pepper.
Then I melted the jack cheese on the buns in the toaster oven.
I made it into a sandwich, it was awesome. Fairly healthy too.
The wife said it was better than anything you could get a resturaunt, you certainly could go with mayo if your heart desired.
 
I made grilled chicken sandwiches the other night. I'll have to try your recipe. Did you marinate the chicken breasts at all?

On mine, I marinated two chicken breasts (small-medium sized) in the following (all estimates):

2-3 T olive oil
1 T dijon mustard
1 T vinaigrette dressing
1 t worstershire
1 t cholula
2 t minced garlic
a few sprinkles of rub (I used a garlic/herb rub)
end of a twig of rosemary
several twists of salt and pepper

Marinated for an hour or so and put it on the grill.

We just toasted some bread and used mayo/dijon/provolone/lettuce/red onion.

It turned out pretty well. I'm always looking for any easy recipes I can get, so I appreciate you posting this.
 
I didn't do anything to the chicken, but that marinade would certainly take it to the next level, it might put it over the top.
