HEB has some sausage but 95% are precooked. I wanted to buy some uncooked good stuff. A guy we tailgate with buys some at Green's Sausage in Temple/Belton that are amazing but I don't want to drive that far....
I haven't lived in Austin for a good many years but I would try either Central Market or Whole Foods.

If you can't find anything you like sausage isn't hard to make and it is fun trying different things.
Austin Hot Sausage -- it's a meat market on E. 12th, E. of I-35, almost to Airport blvd. That's what I use when I bbq, and everyone who has tried it prefers it to Southside, Meyer's, etc. And, it's not pricey at all. Something like $2.69 per lb. Look them up in the book, and give em a call.
I googled some and found this place. I went there and bought 2 pounds of Johnny G hot sausage, uncooked. They had a ton of stuff there. Also bought some stuffed jalapenos, stuffed with breakfast sausage and wrapped in bacon.
The uncooked sausage was from their stuff, pork and beef. $2.49 per pound which is pretty good price. Smoking it tomorrow, will let you guys know how it turns out.
