Good fish for Serviche?

I just got back from Mexico and went fishing. Caught about an 18 inch Spanish Macarel (SP?). Another guy caught one as well. Sadly that was all we caught.

Anyway, one of the guides on our charter chopped these things up and made Serviche for us. Now, my brother had sung the praises of this dish for eyars, but I just thought it was disgusting. As I was hungry on the boat, didn't want to appear rude and it was my fish, I ate it.

That stuff is damn tasty!

So, I want to make it at home. I doubt I'm going to find Spanish Macarel at my local market though (and maybe that's not that good of a fish anyway for all I know), so any suggestions what type of fish to try?

I've been trying to add more fish to my diet, but I generally find stuff like salmon to be ok, but nothing I am terribly excited to eat, so a dish like this really appeals to me.
 
it's "Ceviche," utexas_61 just posted a thread on it, there's a few recipes posted, there's many variations with various fish/shellfish (mahi mahi, sea bass, tialpia, whitefish, snapper, shrimp, scallops). if you do a quick google search and the traditional peruvian variety as well.

my fav is with mahi mahi, but i use tilapia most often.
 
Spanish mack is GREAT for ceviche, BUT -- it has to be FRESH FRESH FRESH. As in a few hours old, at most. Thus, buying it at the market isn't going to be your best bet.

My favorite ceviche is made with just-legal speckled trout. Take a couple of 15-inch trout, preferably caught an hour or so before and iced down on the boat. Filet and dice, add fresh lime juice, a little bit of onion, tomato, and fresh diced jalapeno, and put it in the fridge. Add a dash of sea salt, and eat it on the deck that night with some saltines, while drinking a cold beer. If it gets any better than that, naked women must be involved.
 
They are a ***** to clean but fresh Sheepshead makes the best Ceviche I have ever had. I use to throw them all back until I had some in Ceviche, now I keep those worthless ********, I just don't look anyone in the eyes at the fish cleaning station
