I made a pretty sweet appetizer last night to go w/ some broiled snapper and butterflied shrimp w/ etouffee on the side.

I took 2 shrimp, butterflied them marinaded them in a little olive oil, little italian dressing, Tonys, soy sauce and pepperdoux (louisiana hot sauce).

I broiled these 2 guys while toasting 2 pieces of french bread. Get the bread out and cut it up. Drizzle some evoo on the bread, and crack some italian spices and sea salt over it. Then cut the shrimp up, cut kalamata olives in half, and get some feta. Put those on the bread and hold them in place w/ a toothpick.

Pretty easy and really really good. But I love olives and feta, people who dont might not like it as much.
 
That sounds pretty good but I've got another one for ya:

Ingredients -

1 packet of Pesto
1 Red Bell Pepper
1container of Chèvre goat cheese
1/8 oz parmigiano reggiano
1 loaf of ciabatta

Preheat the oven to 400. Put the top three in a food processor and blend until smooth. Place the mixture into a small baking dish and cover with the parmigiano. Place in the oven for about 15 minutes.

While this is cooking, take the ciabatta and slice in half and heat up the grill to medium-high. Brush each open face with some olive oil and place face down on the bbq. These should be good to go after a couple of minutes so keep and eye on them. Once the bread is cooked, slice into 1-2 inch squares and serve with the dip!
 
I like to layer thinly sliced plum tomatos, zucchini, and mozerella with olive oil that I season up drizzled over the top. Just place in the oven at about 350 for a few minutes. I just watch until the cheese gets hot and a tab brown on top. Pretty easy to do and is a pretty side dish or appetizer.... take them out and put them on a nice piece of brushchetta.
