Is there anything it can't do? Stuff one inside a meatball, make a pesto, ward off evil spirits.

Sauces, soups, steaks, chcken, burgers, sausage, Italian, Cajun, Mexican, French I put it in everything.

And if someone I'm coooking for say's they don't like it, I put it in there anyway!
 
i just started this exact thread, same title, then scrolled down and saw this!
mmmmmmmmm.
i remember seeing a thread on horn depot where somebody smoked some garlic. a couple people chimed in and said it was delicious. over thanksgiving after i fried a turkey, i tried to fry garlic. didn't really work out. anyway, have any of you done any garlic smoking, frying, etc.?
i want to feature garlic at this little get together tomorrow.

i'll get back to you this weekend, cause i'm going to tryi it again tomorrow. anyone want me to try anything before throwing it in the oil??
and full bulbs in a crawfish boil are not only better than allsome, but better than wicked allsome.
 
one of my favorites is to cut off the head of a huge bulb, wrap it in tin foil to avoid burning, leaving the top of the bulb exposed, rub the top in olive oil and spinnkle with some salt and pepper, and then roast it in the oven. when done, squeeze the soft roasted garlic onto baked french bread rounds. awesome.
 
making mashed taters I put 2 whole peeled garlic cloves in the water to cook with the spuds. You can either pull them out before draining or just mash 'em up with spuds. ummm
 
I do the garlic-in-the-water mashed potato trick too.

Ever since my little girl was about three, whenever I would start to cook something by frying garlic she would come up and say "What are you cooking that smells so good, Daddy?"

She does the same thing when I fire up the smoker even before I throw anything on the grill.
 
I was the one who posted about smoking garlic. I just rubbed some olive oil on a few heads and tossed it on the smoker with my turkey. It helps to peel a few layers of the skin so that the smoke really penetrates the garlic, but it was awesome. I also smoked some fresh rosemary for about a half-hour on the smoker and it turned out nicely.

I made mashed potatoes with the smoked garlic and smoked rosemary. They were allsome.

Now whenever I toss something on the smoker, I always put a few heads of garlic on their. You can store it in your freezer for later use.
 
Take 2 garlic heads and cut in half and open.
Drizzle with some good extra virgin olive oil, salt and fresh ground pepper.
Put the halves back together and wrap in foil.
Bake for about 45 minutes at around 350 degrees.

Remove garlic and let cool.
You can squeeze the cloves right out. (sample a few)
Mash these cloves and mix with two sticks of softened butter.
Keep in an air tight container.

Delicious roasted garlic butter.
 
Nah, I just love garlic and smoking foods.

When you fry the garlic with the turkey, just put in individual cloves in. They float when they are done. Fish them out, sprinkle with salt. Enjoy with your favorite malty beverage.

I'm trying Deadhead's smoked garlic.
 
well, i fried the garlic. i was drankin' so i lost some creative motivation. just battered them in the same mix i used to do the asparagus. nothing to write home about, though i am convinced there is potential.
 
here's one i did featuring garlic, with the day off, star wars on dvd, and a couple bottles of red wine to keep me busy:

1. heat 1/4 cup olive oil over medium low heat
2. brown 10 large, peeled, smashed garlic cloves in the hot olive oil (about 5 minutes)
3. add 1 large (35 oz) can of good (san marzano if you can find them) tomatoes, chopped rough
4. add salt, pepper and crushed red pepper flakes to taste -- about 1/2 to 1 teaspoon each
5. add 2 tablespoons chopped parsley and 3 chopped fresh basil leaves, and then boil it all for 4 to 5 minutes
6. add 1/4 cup good vodka and lower heat to lowest temp. and let cook for a few minutes
7. add 1/2 cup cream, and cook on lowest setting for a few minutes

i used rigatoni and melted in a couple tablespoons of butter ino the sauce at the very end. **** it. it was allsome.

it was very very good and very garlicky.
 
I eat it all the time, but my favorite easy recipe follows:

Garlic Lover's Pasta

Take skillet, heat olive oil over med heat. Add 4-5 chopped or mined garlic cloves, I prefer chopped, you can taste it better. Cook for a min or 2, but do not let it brown. Add 1 t of basil and a dash of oregano. Add salt and pepper and also some red pepper. Then add 1 15 oz can of Hunt's diced tomatoes, the kind that have basil seasoning in already. Cook for 20-25 minutes till it thickens some.
Cook linguine although do not cook it all the way take it off a minute early and dump it in skillet with sauce. Serve and throw some parmesan on top. Easy meal, eat it once a week, and good for you also.
 
I have a buddy who cooks and sells food at festivals and fairs two or three times a year to raise money for charities.

He always throws some garlic on the pit to bring in customers. It works every time.

I made zuchini soup yesterday with lots of garlic. My husband and son were harrassing me about how strong the garlic fragrance was, but they gobbled the soup down and went back for seconds.
