Fried Super Bowl Thoughts

Will have about 12-18 people over.

I am frying some chicken with a great recipe I have. Since I am using my big turkey fryer and three gallons of peanut oil, I want to take advantage and fry a couple more things.

What else would be good to fry for the fiesta? fries? onion rings?

What about the non-fried sides?

Thanks for any thoughts!

ditto on the above post. of course, i would fry the snickers first if using the same oil.

they are really easy to do.
 
i actually might fry snickers last, because the chocolate can leak out and mess up the oil. as far as other things go, you can wrap pretty much anything into an eggroll wrapper and fry it. elgin sausabe, cheese and a little tony's come to mind as something i did that was pretty good. i had fried guacamole at the state fair, and that was pretty awesome, not sure how you'd do that though.
 
Hollow out a jalapeno pepper. Stuff it with crab meat and cheddar cheese. Wrap it in bacon. Dip it milk/egg mixture and coat with flour. Fry.
 
Eggroll/wonton wrapper filled with mozzarella and fried = allsome. Egg rolls are pretty damn good themselves - dice up some cabbage, ginger, garlic, carrots, etc and wrap them up.

Sweet potato fries/chips are great too, but a lot easier if you've got a mandolin for the chopping/slicing. Served with a honey/mayo/curry sauce and they're the bomb.

Just a tip on dredging (might be n00b advice, but I just learned it recently) - set up your station:

Flour -----Egg/milk ---- coating (breadcrumbs, cornmeal, etc).

Use your left hand for the flour, then dip in the egg/milk mixture. Use your right hand for the coating. Keeps your hands a lot cleaner, otherwise you end up with a completely coated hand (will happen anyway, but this prolongs it for most of the process).

The flour really is key in helping everything stay together.
 
You guys have convinced me to break out the fryer along with the smoker Sunday. It's going to be ribs, sausage, chicken, and fried ****.
