Will be staying there one night in July while en route to Jackson, Wyoming. Anything interesting to see there?

What about restaurants?
 
While I can't recommend anything specific, we stopped there last year on the way up to Steamboat Springs. There was a great downtown strip that had shops and restaurants that we explored for a couple of hours. Had the feel of a college/resort town.
 
Lived there for two years, loved it. It's a college town, so it's perhaps a bit light on tourist attractions.

As others have mentioned, probably the most interesting thing going on there for visitors is the breweries. New Belgium (home of Fat Tire) and Odell are probably two of the best microbreweries to see. There is also a large Anheuser-Busch brewery out on the edge of town, if seeing a large-scale commercial brewing operation appeals to you.

If you're just there for a night, stay close to the center of town and check out Old Town, which is the downtown area. Lots of shops and cafes down there. Fun place to walk around and browse. The Colorado State Univ. campus is nearby, and that might be fun to walk around and check out, too.

As for restaurants -- again, since it's a college town, they have just about every chain restaurant you could want. The areas near Old Town and campus are probably better choices for more original fare, though. The Charco Broiler on E. Mulberry is a great local joint for steaks and seafood.

If you have time for a little side trip, Estes Park is a great place to visit. You might even consider staying there rather than Fort Collins, if you want more of a mountain experience. Dunno what your schedule is, though.
 
Buy a shot glass at Colorado State with the school crest on it and put it in a safe place.

THEN go on the brewery tours. I'm a New Belgium fan. Even bought their beer globes a few years ago. (I tried to link a photo, but it appears that they're not selling them.)

My dad & his wife retired to Ft. Collins about 6 years ago so we've been. All of the highlights have been covered (Old Town, New Belgium Brewery, Estes Park). Unless you really want to look @ clydesdale horses I wouldn't waste time w/ the Anheuser-Busch tour. Plenty of microbreweries to tour instead.
