Flat Iron Steak

We've been eating a lot of these lately. I just smoked a bunch for my special holiday chili. It is an economical cut, but it has a texture and flavor of something more expensive. It is also very lean for those of you who like that sort of thing.

H.E.B. has a vacuum packed mesquite seasoned version that goes for about $6 for a two pack. Best $3 steak I've ever had. Check them out.

It's a good cut, now shut up about it: there are only 2 per animal, and I don't want people to start buying it up.

That's a good point, but my H.E.B. won't carry it unless more people start buying it. They had to discount almost their entire first order. We probably bought 6 or 7 2-packs for about $2.50 each. That's $1.25 per steak. I bought 5 packs at the regular price for my chili, but that's not something I do regularly. As much as we like them, it simply isn't practical to buy 5 packs a week. I really just need one or two more people to catch on and shop at the San Antonio Lincoln Heights H.E.B.
