Flat Iron Steak

Anyone else use this for fajitas? Skirt steak up here is ridiculously expensive, but for whatever reason, flat iron steak is a lot cheaper.
 
Flat Iron is a shoulder cut near the seven bone roast if I remember correctly. I bet it would make damn fine fajitas after whatever marinade process you put it through (Allegro, a beer, ground pepper, chopped onion, garlic powder or crushed garlic and fresh squeezed lime wedges is mine). If you can find a butcher that can get you sirloin flap/sirloin bottom flap you will be a happy man and that cut is still pretty reasonable.
 
Fajitas are skirt steak; nothing more, nothing less. Whatever you want to call something other cut of meat, or non-beef; it ain't fajitas. Keep your misnomers to yourself, please!
 
I don't think I've ever seen a flat iron steak or hanger steak in the store. Do you have to go to a butcher? Sirloin flap? This is all so ******* confusing.
 
you don't see it in the store because your butcher is taking it home for himself. tell him to stop stealing and give you some.

I would think flat iron would make some fine fajitas, but just be careful not to season it too much. flat iron has a great flavor on its own.
 
I use the flat iron for tacos all the time.

I call it "fajitas", but it really is more carne asada or "steak tacos".

As noted above, "Fajitas" is technically a cut of meat and not a dish, (but I'm not very anal about it).
 
Kroger's in Houston carry them all the time. I picked one up for the first time a couple years back as just something extra to throw on the grill and was pretty amazed at how good it was. Pretty cheap, a hair leaner than other cuts and damn good taste.
 
Kroger actually has pretty good meats. I like the flat iron they have and the 80/20 burger patties are as good as i've had.
 
Used to own a meat company in the DFW area that provided product to a lot of Mexican Food restaurants (mainly mom & pop places, not the chains). The overwhelming majority of them used sirloin flap for their fajitas. Mainly, because it was cheaper than skirt, but it does make for great fajitas. We provided it for them trimmed. BTW - trimmings went into the ground beef.
 
Have become a huge flat iron fan. Got it the first time a few years ago at Jasper's in Dallas. It's amazingly tender for what it looks like (skrit). Kroger has been carrying it for like $4.99 lb. We love it.
 
Flat Iron steaks make great-- skewer steaks--- slice up, skewer and grill--marinade as well
 
I posted about the wonders of flat iron several months ago. Our H.E.B. here in SA carried them for awhile, then stopped. They wanted too much for them, so they didn't sell particularly well. We bought several of them when they put them in the mark down bin, but that's not a reliable source.
