Give me some pointers on how to prepare great fish tacos.

What I know from the internet is that you use a white fish (swordfish & cod were mentioned most of the time). Shredded cabbage is recommended more often times than lettuce. Various combinations of "white sauce."

Can anyone comment on:

1) what kind of fish to use and how best to prep it (fried/baked/the seasoning)
2) How to make a good white sauce
3) what to fill it with other than cabbage if anything

Make mine with tortilla, baked or grilled salmon, cabbage slaw, avocado slices and a chipotle ranch dressing. Quick and easy to make.
