Fish Tacos

Give me some pointers on how to prepare great fish tacos.

What I know from the internet is that you use a white fish (swordfish & cod were mentioned most of the time). Shredded cabbage is recommended more often times than lettuce. Various combinations of "white sauce."

Can anyone comment on:

1) what kind of fish to use and how best to prep it (fried/baked/the seasoning)
2) How to make a good white sauce
3) what to fill it with other than cabbage if anything

Go to San Diego and eat at Rubio's.

Turns out that you don't just have to go to SoCal (or San Diego specifically) anymore to get Rubio's Fish Tacos. (My personal favorite as well.)

Make mine with tortilla, baked or grilled salmon, cabbage slaw, avocado slices and a chipotle ranch dressing. Quick and easy to make.
