first time smoking a brisket

not off to a good start. supposed to wake up at 5, got up at 545. cant get the temp below 275. leaving it alone for 30 minutes and putting the beef on at 7. pictures will posted throughout the day as i drink more beer/wine.

Remember, air control (for regulating the temp) is done via the intake, NOT the exhaust.

You can also spread the coals or wood out a bit to relieve the high heat somewhat. If the food is in the smoke chamber already (unsure as to what kind of smoker you have; no photos), be careful when disturbing the wood as you want to limit the ashes that move through the system.

Well, with the delay caused by the hot fire, at least you had time to properly boil it before putting it on the smoker.
 
yeah i dont know where my cord for the camera is. they will be posted eventually. the brisket did a good job solidifying my bowels, i will say that.
 
once again, it was my first one. i only had the advice of hornfans to go by, so now i know that its ok to start it off that way. i will probably do another one this weekend, but am going to try to not drink 12 beers before 8pm. i was messed up on saturday.
 
You guys are a bunch of ********, you know that? I come on this board to look around and now I can't get brisket out of my head.

Anyone got a good method of cooking one in the oven? I don't have a smoker, and I have yet to invest in a good pit. I know, I know... cooking a brisket in the oven is against the law in Texas, but I want to cook a brisket and the oven is all I have. So help a brutha out!

my mom used to make one in the oven and she used fish sauce on it.

try looking up jewish cooking for a recipe for brisket in the oven.
 
If you have a gas oven, cook it like a roast except set the temp to about 200 degrees. Cook for about an hour/lb. Place some chips of your favorite wood on a cookie sheet or other shallow pan in the broiler to get the authentic smoke ring. If you try this, I'd recommend turning the exhaust fan on high, open the windows, and keep the fire extinguisher handy.
