Fallow and Axis Recipes

Picked up both my fallow and axis meat today! Can't wait to eat the axis tenderloins!

Any must try recipes for either? Also, whats the best way to prepare the ham steaks?

Just grill the axis and make a compound butter with sage and put a dollop on top of the cooked meat.

I do this for whitetail backstrap

skewered on grill

marinate in
1/2 kens balsamic vinegrette-- balsamic tames meat
1/2 mesquite flavored marinade ie Lowry's

roll in course black pepper and montreal steak seasoning

skewer and grill hot and fast-- bring off med rare
