My dad has a recipe for fajita rolls.
What he does is cuts a strip of fajitas maybe 8" long by 3" wide. Then dice up onions and jalapenos. Put the diced onions & jalapenos in the fajitas and then roll it length-wise and use a toothpick to keep it in place.
And then you grill it like normal. When you are done, you eat it without tortillas. It is pretty good. Anyone try this? I have done it a couple of times but need to do a better job rolling the fajitas tight.
One point, when you cut the original pieces to do this, make sure to put thought into the orientation that people will be cutting it while eating. Make sure that you prep it such that they cut against the grain by design.
