my phone's description says this:

Quad-band GSM/GPRS/EDGE world phone

does this mean that i can just get a euro sim card? and get pre-paid minutes?

theoretically yes, you should be able to just pop out your cingular sim card and pop in one you buy there. quad band would ensure that you could get on whatever freq the local network used. however, with the phone lock-in that u.s. carriers use, you may need to unlock your phone to use a non-cingular sim.
 
Or for probalby the same price you can just get a pay as you go phone here. Not sure where in Europe you are going to & I can only talk for the UK, but for example...

While I was in Ireland (Vodefone) & London (T-Mobile) in February, my plain old Cingular Motorola phone was getting signals and could be used as a U.S. phone that was just roaming in an expensive zone. My phone was LOCKED, so I needed to unlock it before I got a SIM card.

I got my phone unlocked in LA for $25 at a cell phone/pager place on Melrose. They used some software hookup and it took around 10 minutes for them to get to it and unlock it.

Now I am in Argentina using a local SIM card, doing the pre-paid minutes thing for Texts & Calls and everything is fine.

I was excited to find out that you do NOT get changed for incoming calls. When I told this to an English girl she responded in her Oh, you are so innocent it's cute voice and said "Oh sweety, you only get charged for incoming calls in America. Nowhere else in the world does that." (Annoying and good to know.)

Get the phone unlocked and you should be good to go. NOTE- My Argentine SIM card does not allow out of country calls. I would think that in Italy, you could call throughout Europe, but I don't know. Maybe not.
