So... I think I have garnered a decent reputation as a cook amongst my friends. So much so, I believe I am going to have to cook some elk steaks for some friends. They got the meat and want me to cook it for them... sooooo the question is... has anyone worked with elk meat before? I am assuming that it is a lean slightly gamey meat that should be cooked med. rare, and seasoned none too heavy and not unlike lamb or beef.... but if you have any particulars I would love to hear 'em.

I used to eat Elk a lot and to me it doesn't taste gamey like deer. But it is lean and very red. I like to use a rub on them, Montreal or your own favorite spices then put in a ziploc bag overnight or at least 3 hours. Let it come to room temp and then put on a medium grill with a pad of butter on top. Grill each side 3-6 minutes depending on thickness and preference. I like Medium.
 
so I took the advice of a chef friend and used the following marinade with no other seasoing.

3 parts French dressing, 2 parts soy sauce, 2 parts Worchestershire sauce....

I marinated them for about 4 hours and then grilled. They came out quite nicely I thought.
 
It's not gamey at all because elk are grass eaters. It is very lean, though. The flavor is pretty close to beef.
