Egg salad

Took my 2 y.o. daughter to this place across the street from Rippey's Feed in Drippin' yesterday - lunch with my Mom. She ordered the salad - I think it was tuna, though... not egg. Similar idea, however.

The cook / chef (for who the **** knows why) decided to put an assload of cayenne in there & it's not mentioned on the menu anywhere.

The waitress specifically said (after my Mom complained) "Yeah, he likes to do that from time to time."

WTF?

I mean, we know hot. We're Ex-Pat / Escapees from Lousy-Anna. We get the heat thing.

But this was insanity in a tuna sammich.

From a 1950's paperback kids' cookbook:
4 boiled eggs, peeled
1 Tablespoon French's Mustard
3 Tablespoons Miracle Whip
1/4 teaspoon paprika
salt
8 slices doughball white bread
Coarsely chop the eggs, add the other stuff and spread on the bread. To make it haute cuisine, cut the sandwiches in half.

We called Miracle Whip mayonnaise all the time. I don't think I knew there was something else called mayonnaise until I was in my early teens. Mrs Idahorn2 refuses to eat MW, or even spread her mayo with the same knife. We are a house divided.
 
besides the typical mustard/mayo binder. I often chop up onion, bell pepper, garlic and saute this in bacon fat after I've cooked the bacon crisp, and add all that, crumbled bacon included to it. Finish w/ some fresh green onion tops chopped and some hot sauce of choice, and it's a winner.
 
The best egg salad is simply boiled eggs and mayo. The deluxe version is eggs, mayo and cream cheese.

I have made it with celery, onions, etc. like tuna salad and the best is just eggs and mayo. That is mayo and not salad dressing. Salad dressing has sugar in it that gives it a whang that is not good.

Have you ever wondered why some blue cheese dressing is devine and others are vile? They were made with salad dress (sugar) and not with real mayo (no sugar).

The best turkey salad is simply a pound of good smoked turkey, 8 oz. cream cheese, 1/2 cup real mayo, and 4-6 pencil size green onions without tops. Blend in the food processor and you can fold in some green onion tops by hand. Adding the tops in the food process will turn the turkey salad green in color. It still tastes wonderful but it is green.
 
Thank you, shorty! Finally, someone who agrees with me on egg salad. Mayo, eggs and salt & pepper. Nothing fancy needed! I hate finding something crunchy in my egg salad.
 
You are welcome. I worked with a woman who made it like this. She did not even add salt though. I find I can get away with not adding salt but I do have to add pepper.

This is a summer supper staple on our home.
 
This thread prompted me to make a batch this afternoon (my first attempt). After referring to the January thread on how to hard boil eggs, I successfully did that then added light cream cheese, light mayo, a tiny bit of mustard and even tinier splash of pickle juice, and then salt and pepper. It's pretty dang good for my first try.
 
I can't stand crunchy stuff in egg salad or tuna salad. Save the celery for the holy trinity.
 
I concur with egg, mayo (not Miracle Whip) and pepper. My wife likes to add a dash of caper juice, which is not aweful.
