Seriously, is there a better food than bacon. I love bacon. And it's really good for you, so what's not to like?

truer words were never spoken

now, to spinoff a little, i give you this:

make mashed potatoes like normal with cream and a lot of butter. however, before you start in on the taters, cook quite a bit of chopped bacon in a pan. dump the bacon, and grease into the potatoes. i did this one time, and if i have "regular" masehd potatoes, I get insulted.

*of course, there are other good ways to make them, but I jsut don't "get" using only taters, butter and cream. make zero sense. it's so f'ing easy to add some rach, cheese, japs, etc.

When we can actually eat real food, one of our favorites is Spaghetti Carbonara. First had it in Salerno in 1973 with green and 'white' pasta.

Chop up some thick-sliced bacon and put it in a cold pan with lots of mashed garlic. 2 slices and 1 or 2 cloves per diner--or more. Cook it low and slow until you like the look of the bacon. Dump in 2 beaten eggs per diner--don't pour off the grease. When the eggs are about done, dump that on some cooked spaghetti. Pour on lots of Parmesan from the green plastic can and dive in.

Fancy versions use pancetta, cream, white wine, Reggiano, etc. Probably ok and I may try such variations sometime.

Caution: 30 years ago the little woman scrambled some really rushed/hurried breakfast eggs in the pan used the night before for this dish. Massive garlic flavor at 0700 may be only for the swarthier Italians from the South. Deadly. I, naturally, still kid her about it.

ah ha that is indeed one of my favorite recipes. sometimes i will get on a kick and eat blt's several days in a row.

From time to time I will add tabasco sauce drops to bacon to give it a little extra kick. The best part about bacon is the tin can I have in my fridge for whenever I need to add some pork fat.

Oven baked is the only way to "fry" bacon. Preheat oven to 400. Put bacon on broiler pan. Bake (not broil) for ~10 min or until it's cooked as desired. No turning, no splattering, perfectly uniform. This is the way many restaurants prepare bacon BTW.

I enjoy having breakfast in bed. I like waking up to the smell of bacon ----- sue me -- and since I don’t have a butler, I have to do it myself. So most nights before I go to bed I will lay six strips of bacon out on my George Foreman Grill. Then I go to sleep. When I wake up, I plug in the grill. I go back to sleep again. Then I wake up to the smell of crackling bacon. It is delicious. It’s good for me. It’s the perfect way to start the day.

I like this "recipe" I got from Everyday Food(PBS).

Oven at 375
Line bacon on cooling rack set on baking sheet. Sprinkle w/brown sugar and the a lot of fresh ground pepper.
Cook until done.

Very very good.

How long does uncooked bacon last in the fridge?

My Grandmother used to make canned green beans taste like fresh homeade by doing the following.....

Chop some bacon into small pieces and fry in a pan until you reach the desired crispness.
Add chopped onion (white or yellow) and cook until onion is clear.
Drain 2 cans of green beans completely and add to mixture.
Season with salt and pepper.
Cook for about 5 to 10 minutes.

Delicious.
Remember when cooking bacon and onions (the greatest smell in the world by the way) the bacon will not get any crisper once the onions are added so make sure you get it where you want it before adding them.

made twice baked potatoes last weekend, 6 large bakers cooked, then scooped out mixed with 1lb. of cooked bacon chopped, onions sauted in the bacon grease, butter, sour cream, salt/pepper all mixed up and back into the skins, then topped with grated cheddar, rebaked and then broiled to finish off - was fantastic and the bacon made it happen
also, I keep a jar of bacon grease in the refrig cuz a teaspoon in any vegetable dish makes it better
