BACON - WRAPPED & JALAPENO - STUFFED DOVE BREASTS

INGREDIENTS:
15 dove breasts (new limit this year)
15 slices bacon
8 pickled jalapenos, sliced lengthwise
3 tablespoons melted butter
1.5 teaspoon garlic
1.5 teaspoon ground black pepper
1.5 teasoon salt

DIRECTIONS:
Mix last four ingredients together. Pour over dove breasts and marinade at least 4 hours.

Place a jalapeno half inside the cavity. Wrap each dove breast with a slice of bacon and hold all together with a toothpick.

Grill over medium heat, about 4 minutes per side, until bacon is crisp and dove breasts are brown.

Enjoy.
 
Try dipping them in Tiger Sauce before you put them on the grill.

I marinate them in ken' balsamic the night before, skip the japs and sprinkle on Montreal before bacon wrap

assume you mean boneless dove breasts...if not, take the extra time and cut the meat off the bone.
 
BACON WRAPPED & JALAPENO - is played out. Not that dove really has the best taste in the world by itself, but you can't really even taste it at all with this recipe for all the bacon and japs.

Try this: honey-ranch pan fried dove
8 dove breast
1/3 cup honey
1 tsp. garlic powder
1 tsp. Herbes Province
1/2 tsp. salt
1/2 tsp. pepper
1 cup processed wheat thin ranch cracker crumbs
1/4 cup flour
1/2 cup grated parmesan cheese

Mix garlic herbs, salt and pepper, flour and cracker crumbs in food processor. Add parmesan cheese to crumbs and set aside.

Brush coat each dove breast with honey and roll in cracker crumb mixture. Fry in skillet that has been coated with peanut oil for 10-15 flipping every 2-3 minutes until golden brown. Serve with jalapeno cornbread and red beans.

Doves wrapped with bacon stuffed with japs and grilled is muy bueno and hard to beat. But if it can be beatm, here is how to do it:

Roll fileted breasts lightly in seasoned flour. Lightly brown both sides in olive oil.
Remove dove from skillet and add onions, garlic, etc....... and sautee.
Deglaze pan with red wine
Throw dove back ijust to finish cookling and thicken with a little sour cream, maybe some cornstarch solution.
Serve over rice or pasta with crusty bread.

Good stuff.
 
The best dove recipe I have ever come across and the only one I use is to come to an understanding with all my hunting buddies that they get to keep all the dove and then I get to keep all the quail
 
this past week I had a dove cheesburger at our lodge in Argentina. I did not get the recipe, but I will try to replicate it once I shoot some dove here.

Take the meat of the breast and chop finely, add chopped fresh jalepenos and/or onions, and some finely chopped mushrooms. Cook in a skillet with your favorite seasonings, place on top of a bun, then cover with your favorite cheese, then place top bun and enjoy.

It was one of the best things I've ever eaten
