I have ONE on New Year's Day with the in-laws & manage to hide it in the center of some Mac 'n Cheese - but I make sure @ least two people see me stick it on my spoon so they won't think I'm lying.

Love them. If you have had them when they have been cooked with the right seasoning and boiled long and hard enough to produce a generous amount of pot liquor, they are fantastiic. Cornbread to sop up the pot liquor is a required and not optional.

i make a black-eyed pea dip on new years day. great with fritos and bowl games. and bloody marys. it gets pretty good reviews everywhere it goes. it came from an old texas cookbook by a politicians wife, but can remember who, maybe hobby. its sauteed bell pepper and onion, mozzarella cheese, ketchup, and cant recall what else. very delicious.

Love em.....need a little vinegar on em and not cooked mushy. When I was little my dad used to buy tons of em every summer from a farmer and my mom made me and my brothers ' peel em from the pod". that part i didn't like but mom sure knew how to cook em!

Cooked a long time with some salt pork and some large diced onion. Lots of pot liquor. Corn bread (no sugar in it), green onions, and homemade pepper sauce.
(Cup of chili pequins, cup of cider vinegar. Bring the vinegar to a boil and pour it into the shaker bottle with the peppers in it. Ready to go the next day. You can refill the vinegar twice.)
