it's been a killer January day here in NYC....70 outside and sunny. this is great as I'm recovering from a nasty cold/flu like thing.

as I need to feed myself well so I can recover well I thought I'd have a steak. I've dry rubbed a filet with Cumin and Cajun spices, going to slap it on a iron skillet in the over for about 10 minutes at 390.

I'm also going to cook up some shroom and shallots in a pinot noir reduction, and add some sweet italian suasage to that mix.

I'll drink a glass of the Pinot with the final results. Foccaca (sp?) bread with rosemary and no other veggies as I spaced out picking them up and I don't want canned
 
When I have the yuckydos I want some form of chicken soup even if it just chicken broth with a ton of lemon pepper in it.

Super quick chicken and dumplings can be made with chicken broth, a package of frozen seasoning veggies (onion, celery, bell peppers), minced garlic from the jar, thyme, salt, pepper, and frozen chicken grilled chicken strips (grilled has more flavor). Thaw the season mix in the microwave and saute in a small amount of olive oil. Add garlic and thyme to taste, add 32 oz. of chicken stock or more if you are making a larger batch, add grilled chicken strips and bring to a boil. Simmer and adjust salt and pepper.

There are several ways to do the dumplings. If you like soft fluffy dumplings, add a can of biscuits to the simmering liquid or add water to biscuit mix until it is a thick batter and drop tablespoon portions in simmering soup. If you like "slicks", cut egg roll wrappers into strips and brush very lightly with olive oil and add to simmering water. You can find potato ghnocci in the pasta aisle now and those are another alternative for dumplings. Sometimes you can find frozen dumplings in the freezer section.

It takes about 30 minutes from start to finish and is great when you catch some of the funky stuff going around.
 
sausage in the mushroom shallot wine reduction seems highly questionable -- seems like it would totally overpower the sauce and its flavors but, i'm interested in hearing how it turned out
