Cucumber sandwiches

Get some nice white bread--maybe Oroweat's Country Buttermilk or the like.

Trim off the crusts to make the slices square; lightly spread some mayo, then wipe it off the bread--leaving only mayo in the pores of the bread.

Peel some cucumber and slice it; less than 1/4 inch thick. Place these slices on the bread. If you want to add a real taste sensation, sprinkle on just a little chopped parsley.

Put one slice of mayo'ed bread on top of the cucumber and parsley, then slice it diagonnally twice.

It should go well with Hookmom's brownies. If you are really curious, take a bite before you throw it away.

I've done something kind of similar to that before. Get a really good bread and cut the slices fairly thin. Toast under the broiler (or in a toaster oven for a minute or two. Cover with a thin layer of cream cheese spread (I make mine with garlic, chives and a little bit of rosemary), followed by a layer of very thinly sliced smoked salmon and some very thin slices of cucumber. Top with a little olive oil or lemon, salt and pepper and enjoy. They're great to cut in half or thirds and serve open faced at a dinner party or something. I think I got the idea for that from Ina Garten or something.
