Crock Pot Recipes

Anyone have any good crock pot recipes that aren't designed for 10 people... there's just two of us (our baby isn't down with crockpots, yet) so we don't need massive recipes. I've tracked down a few that were reasonable but need more insight. I like the idea of using a crockpot as winter comes around for some heartier dishes and ease of use thanks to the baby crazyness.
 
*this is very far from gourmet, but it is a super easy, tasty meal that will last a few days for 2 or you can bag it and freeze it. i usually just eat it with steamed rice too. it will all fit in one of the oval/larger crockpots.

-you can use either ~3-3.5 lbs beef rump roast or use about the same weight in 1 or 2 pork tenderloins (the beef will come out like a roast, the pork gets really tender and is more like a stew)

-rub roast/loin liberally with salt, pepper, and garlic powder
-combine in crock pot with 1 can golden mushroom, 1 can cream of celery, 1 can water, 1 package powdered onion soup mix
-1/4 up 10 or so red/new potatoes and add along with one "medium" size package of baby carrots.
-make sure the soup is stirred around and covers everything.
-low for 9-10 hours (i just put it on before i leave for work and take it off that evening)

there is plenty of room to add peppers or whatever you want to season it, but that is about as easy as it gets and tastes good in the winter.
 
I get a large rump or round, (I have two teenage boys so it is a big one), and pour a jar of barbecue sauce (I prefer Stubbs spicy) over with onions. Cook for 8-9 hours on low. Shreads easy with fork and makes a nice barbecue beef sandwich.
 
crockpot green chicken enchiladas:

Dip 4 corn tortillas in a bowl of Herdez green sauce. Then mix the green sauce with a can of Herdez diced peppers (the green ones) and some sour cream. Put a corn tortilla on the bottom of the crockpot, then a layer of shredded cooked chicken (can be canned, roasted, or whatever you have on hand - leftover turkey would probably work too.), a layer of the green mix, and a layer of shredded cheese. Repeat until you have used all 4 tortillas. I have been cooking one hour on high and one hour on low, but that gets it pretty mushy, so you could probably cut to low after a half hour on high. Everything is cooked when it goes into the pot, so it is hard to go wrong. Makes 2 or 3 servings.
