I made crepes this weekend for the girls. Used Julia Child's recipe for the crepes, made a creme anglaise sauce to top it with. It's basically a custard sauce. It was hell to make. I really need a double boiler.
I filled them with fresh strawberries, bananas, and marscipone cheese.
Topped with the creme anglaise, I was king for the weekend in their eyes.
You can do them savory, I was thinking maybe sauteed shrooms.
Anyone have any good suggestions for fillings?
 
Chorizo con huevos?

Of course, I'm mexican -- I see a flat, round object, and I instinctively fill it with eggs and meat.

Maybe seafood in a mornay sauce?

I bet you could make a sweet "le sausage wrap."
 
I may not be revealing any well kept secrets here, but you don't have to have a double-boiler. Just put a metal or oven proof glass bowl over a pan of boiling water.....it's what most chefs do anyway as you can use a much bigger bowl. No need to waste $ or storage space on a double-boiler.

For savory crepes, try fresh roasted asparagus spears with maybe a cheese or other vegetables like mushrooms or onions. Put a hollandaise sauce over it using your makeshift double-boiler.
 
MrM- One thing you have to keep in mind when using a DB, however it's put together, is the bowl over the water must NOT come in contact w/ the water in the lower pan.
 
Got it, DC. I believe I got impatient and stuck it in the water.
How long does it usually take for the custard to "set"?
 
My grandmother from Quebec always makes me sweet crepes with peanut butter and jelly or maple syrup/honey with a little butter.
 
Second the Nutella...with whipped cream. The best crepes ever. Mmmmm...reminds me of the street crepe vendors in Paris.

For something healthier, go with fresh fruit like strawberries, raspberries, bananas, etc...with whipped cream...

If you want to go to more work, Crepe Suzette are a classic.
 
Chocolate crepes filled with fresh (sliced) kiwis and strawberries. Topped with a little chocolate sauce. Whipped cream optional.
