'Cowboy for a Day' in Central Texas area?

I have some friends coming in from England the first week of April and their two boys (7 and 3) are absolutely nuts about "cowboys".

I'm looking to find something like a "Cowboy for a Day" adventure that would be suitable for them...

Does anyone know of anything? I found a couple of things via my old pal Google, but they might be a little too "older kid"-range for them.

For $ 25.00 a head, I'll let them come out to Dripping Springs & collect the eggs from our chickens, feed the horses, give 'em a full cleaning (brush, wash, pick hooves), put out hay & even use a chainsaw (depending on the age) to cut down cedars & start a bonfire that night.

I'll toss a brisket & some birds on the smoker.
