baby backs should take about 4-5 hrs at 225 degrees. this site has info specific to the weber smokey mountain cooker, but should generally apply to your smoker.
You can buy a bag of wood chunks (oak, mesquite, hickory, and mesquite are the most common) at the grocery store. Soak the chunks in water for a couple of hours, more is better. Plug the smoker in and when it comes up to temperature put 1-2 chunks of wood on the heating coils. You will soon have smoke.
As far a meat goes. I recommend baby back ribs. Peel the membrane off of the back. I usually season mine with Tony's. Throw in the smoker and forget about them. When the meat begins to peel back from the end of the bone, the ribs are done. If you want them extra tender then at this point wrap them in foil and add a little beer, seal, and put back on the fire for 20-30 minutes. Voila.
