Cooking 'hot' wings on a grill

About the only way I evey cook wings is on the charcoal grill, where I wait until their completely done then add Kraft Spicy Honey BBQ (heated). To me they taste great & everyone always raves about them.

However, I was wanting to spice up my wing repertoire with something that's pretty hot I looked at a few bottles at Walmart last night (Hooter's recipe), & it looked like these all called for cooking inside & putting the sauce on before you even cook them.

Is there any reason I couldn't just cook these on the grill, and then add the sauce? I'm afraid if I add the sauce too soon they'll just burn on the outside & not cook well enough on the inside.

Grill em. Melt some butter in some Frank's hot sauce and throw them in there for awhile when they are done.
 
I use Louisiana Hot Sauce on mine. Damn hot and damn good! Soak the wings in the sauce for a couple of hours. Grill 'em or smoke 'em...good both ways; actually much hotter if you smoke them.
 
Yes, you can grill and then put on the sauce. Here is my "Texas" version of the Anchor Bar wing sauce.

6 tbl Cholula
4 tbl margarine
1 tbl white vinegar
1/8 tsp Cumin
1/4 tsp Chipotle powder
1/8 tsp Garlic salt
1/8 tsp Black pepper
1/4 tsp Worcestershire Sauce
1 tsp Tabasco Sauce
 
Stubb's Inferno Wicked Wing Sauce.

There isn't an easier and better way to grill a hot wing. They are more of a black pepper hot flavor than the red pepper sauce of buffalo style wings, but they are delicious. I make all kinds of homemade hot wing sauces and some of them are bad *** and some not so much. However, people always love the Stubbs Inferno (if they like really hot ****).
 
Why mix butter with the wing sauce ? (other than the fact that butter makes everything better)
 
i like stubbs as well. the most important part about doing on the grill is making sure the sauce doesn't have much or any sugar. there are several wing sauces like this. no sugar, no burn.
 
Woland, thanks for that recipe. My last grilled "Buffalo" chicken turned out only so-so. Your recipe looks much more authentic.
 
Thanks for the tips. I tried them with Stubbs & the Louisiana Hot Sauce. Both were good, but the LHS was what I had in mind.
 
So, I smoked a whole lot wings yesterday for a couple hours. Based on last week's success with some chicken breasts, the plan was to smoke them with pecan for a couple hours then crisp up the skin a little bit on the gill.

seasoning: used the habanero bbq bath stuff I've seen on here, made by some former longhorns. I met one of the guys who make it, and he was kind enough to give us some samples. I diluted it with shiner vs. water, because i like beer.

Well, i transfer the first rack of smoked wings over to the grill, at about 50% on the heat. Walked inside to check scores. Five minutes later, raging inferno. to the point where i cut the gas line. Took wet towels to try to block up any holes to cut the oxygen. After it died down a little bit, we covered the grill with wet towels to extinguish it. I guess too much grease, maybe overloaded the grill? It flamed up to the point where I had the wife start looking for an extinguisher. Never have had that happen before. And we use that grill at least weekly for the past few years.

Luckily, I don't think I ruined my grill. Weber makes some sturdy gas grills. But I did eat a rack of non-crisped wings, with bath and shiner combo, and they were great. Spicy but not blazing hot, with a smoky flavor. Chicken breasts prepared in the same manner were great too. I'd recommend the marinade. I think he said Whole Foods carries it.

And always be careful when playing with fire!

I don't know the actual recipe.
