Chili Spices

Wick Fowler's Two Alarm Chili Mix. From one of the participants in the original Terlingua Chili Cook-Off.

Beat me to it; dang.

I concur. Wick Fowler's is great in a pinch, and it is a great learning tool as all the ingredients are packaged individually so you can see what exactly goes into it.

Wicks is the best I have seen. Years ago I received a case of Carroll Shelby Chili fixins. Most likely everything in it is already in your cabinets but its not to bad. I would say that if you use one of the prepared ones to double up the amount of spice packets needed and add some more red pepper. Then you will have some edible chili that wont taste like it came from a soup can.

Just curious, what's in the Wick Fowler's? I typically use 3 parts chili powder, 1 part paparika, 1 part cumin, and maybe some cayenne for heat. I've always wondered if I'm missing something, though.

Ingredients: chili pepper, comino, garlic, masa flour, onion, oregano, paprika, red pepper, salt.

If you know what kind of chiles you prefer, you can get a bunch of dried ones at Central Market, toast them in a pan until they start releasing their aroma, and then grind them up in a food processor/spice grinder. I also like to throw some cumin seeds into the pan to get toasted and grinded. Maybe some coriander seeds too.
