Chicken Salad (NOT a salad w/chicken)

What's your favorite way to make old time chicken salad?

I'm going to go with some celery, walnuts, grapes, and maybe a bit of green onions for tomorrow. Mayo & something like a mix between sour cream and cream cheese (because I couldn't find either) and a bit of salt & pepper. I'm considering a dab of mustard, but I don't know.

I'm making lunch for myself and a little lady, so I kind of want something a little interesting. I think that down here, the grapes will be a mind-blowing addition.

I also like curry with raisins, but not this time.

Any other preferred twists?
 
Jalapenos or other pepper. Not enough to make it torturous, just flavorful.

Homemade mayonnaise, celery, grapes, pecans and diced Braeburn apple. On multi-grain or sweetberry bread.

Damn, now I've gone and made myself hungry ...
 
hate to admit it, but for chicken salad, my favorite "recipe" is to go to Spec's, head to the deli section, and buy a quart or two.
