Chicken Noodle Soup!

For me it's getting to be the time of year to start making my Chicken Noodle Soup. I've gone the traditional route for some time now, you know chicken, mirepoix, noodles and cayenne for heat, but I'm looking for some variations.

I usually make something like this:

2 cans chicken broth
4 cans water
2 chicken breasts, cut into small pieces
1 onion, diced
2 stalks of celery, chopped
1 carrot, chopped
Salt and pepper to taste
12 oz. broad egg noodles

Throw all but the noodles in a large pot, and cook for an hour. Once the vegetables are as soft as you like them, add the noodles, and boil for the time recommended on noodle package.
 
ADD OKRA!! I am not a huge Okra fan, but I will tell you it is AWESOME!! Just get a bag of cut up frozen okra and you will love it!! Not fried okra, regular...
 
Here is a recipe I got from America's Test Kitchen. It involves making your own broth which is helpful if you don't have homemade chicken stock. I advise strongly against using store-bought chicken stock/broth as it tastes nothing like a good homemade broth.

I follow this recipe pretty closely, except that i add roasted corn. The sweet little niblets add a lot, I think. And I use homemade stock if I have any.
