Chicken Garlic Pasta

not necessarily what you asked for but...

Take diced chicken breasts and brown in butter and olive oil. Reserve. Slice onions and brown in remainder, add shitload of garlic, (optional here,add asparagus cut in 1" pieces), add garlic toward done, until cooked clear, then, add chicken back in, pour in 1/2 cup heavy cream and let reduce for 10 minutes. Toss with penne or other suitable pasta, add parmesan, go to town. Asparagus and chicken makes a good match.
 
man, several years ago the statesman published mezzaluna's recipe for their fusilli della nonna, and i clipped it and saved it. i made it several times. i went and looked for it tonight when i saw your post, but it appears to be gone. damn, i am sad b/c that dish was crazy.

Made judgroybeans recipe tonight. It was pretty tasty. I used the following:
3 chicken breasts
1 whole onion
5 garlic cloves
1 bunch of asparagus
1 cup cream
1/4 cup parmesan mixed in, then more topping it

I also added pepper and a bit of wine as well. Next time I will add more garlic. Served over whole grain pasta, so at least it was a little healthier. I need to mess with it to bring it within 5-6 weight watcher points per serving before pasta. Possily cut out the butter all together and use a 1 or 2% milk and flour mix instead of cream. Thanks for posting the recipe!
 
You can use this same recipe, except with slivered ham, and green peas (frozen). Use a little less garlic, and add in a couple of tablespoons of cajun mustard to the cream.

Another one of my favorites is to saute diced bacon and onion, add garlic, red pepper flakes, then add a half cup of low-sodium chcken broth, and a couple of cups of chopped spinach (I use fresh but you could use frozen). Cook until spinach is wilted and done, then add in pasta, good olive oil, and parmesan cheese. Good stuff...
 
Lostman, I wonder if Cream of Chicken soup (or some other cream soup) can be used instead of the cream? I know those cream soups are extremly low in points. I think I will try this.
