Chicken Breast Challenge (no grill)

So I'm' going to contribute one, but thought I'd check with ya'll to see if people had good (ideally easy) dishes to do with chicken breasts, as I've got them laying around and always looking for new ways to do it. I moved into an apt, so I no longer have a grill so that's the only rule applicable in the challenge.

Chicken w/ cheese and mushrooms in wine.
ingredients
- Chicken breast
- mushrooms
- shredded cheese (prefer cheddar)
- table red wine.

1). cut up the mushrooms and sautee the mushrooms. Usually do it with some salt/pepper/oregano
2) While the mushrooms are cooking, pound out the chicken to make it even. sprinkle flour, salt n pepper on it.
3) when the mushrooms are done, throw them in a bowl, and throw the chicken in the pan. Cook it up.
4) as the chicken is ready, pour in some table wine (cup or so...whatever looks good), and then smother the chicken in cheese and mushrooms....cover long enough to make the cheese melt.

I usually serve with some rice of choice, and use the wine as a sauce for both the chicken and wine.
 
I made some chicken breasts the other night. I marinated them in olive oil, lemon juice, thyme, garlic, soy sauce, and Worcestershire, then baked them in a Pyrex @ 400 degrees.

I served them with some quinoa (South American grain) I made by cooking it in half veggie broth and half tangerine juice, with some thyme and onion thrown in. Roasted some carrots in the oven for about an hour with salt, olive oil, and brown sugar.

Damn it was good.
 
I cook a lot with quinoa as well. It's a snap-in replacement for rice, I cook mine with a Spanish rice recipe a lot, and it even cooks with the same 2:1 water / grain ratio. It's high in protein (containing a more complete amino acid profile than even soy), super nutritious, and you'll be seeing a lot more of it in the future. Definitely give it a try.

You can find it in the bulk grain section of places like Central Market, Whole Paycheck, Sun Harvest and the like. If you live in small town, like I do, you can still pick it up at a health food store. Arrowhead Mills sells it in bag form.
 
Deep fry it.

For the batter put one whole bottle of Texas Pete's hot sauce into the egg mixture.

You think it would be spicy, but it adds just enough flavor since it is fried so quickly and it is not soaked in the eggs for an extended period.

I'm sure you can easily fake it with a George Foreman type grill if you're lacking 'the real thing'... of course, you'll miss out on some of the taste you get from doing a 'real' grilling (I usually toss in some Oak chunx when I grill anything, but that's 'cause I have an endless supply of Oak).

I use quinoa, too... it's excellent and very nutritious. You can but it plain or "flavored" with spices.

I sometimes buy chicken breasts, cut a pocket in the middle and stuff them with either feta or some other goat cheese, sundried tomatoes and olive tapenade. Brush the outside with olive oil and herbs and throw them in the over. Pretty tasty.
 
Go the super evil route...

Put some chicken breasts in a casserole dish. Cover with a BUNCH of bacon strips, mushrooms and onions.

Put in oven for a while until mostly done. Then, pull it out and smother with cheese, pour a nice thick BBQ sauce all over it and finish cooking.
 
Asparagus/goat cheese stuffed chicken breasts.

You can Marinate in what ever you want...italian dressing, dry rub + olive oil....whatever.

In a skillet, saute some onions and fresh garlic, maybe toss the asparagus in for a bit.

remove the asparagus.

Pre-heat a separate cast iron skillet with a little olive oil.
Pre heat oven to 350

add goat cheese to the onion and garlic mixture until it gets good and melty and spreadable. remove from heat and set aside

Butterfly your breast, spread goat cheese mixture on the inside of the breasts, place a couple/3 stalks of the asparagus lengthwise. Close chicken halves, secure with toothpick or twine.

Place secured chicken in skillet for about 4 minutes per side, then finish in the oven for 15 minutes.

Delicious.
 
Hey, Mistadobalina, I tried your recipe tonight. Very good. Very simple. Very good. I changed it up a little. I breaded the chicken breasts with seasoned bread crumbs (plain bread crumbs + 2 tsp paprika, 1 tsp garlic powder, 1/4 tsp salt and 1/4 tsp black pepper). I also eliminated the wine. Thanks for the recipe.
