Cheesecake Chimichanga

it is jsut a weird name for fried cheesecake.

the recipe:

take some cheesecake and roll it in a flour tortilla. fry it. then dust with cinnamon-sugar/powdered sugar.

that is seriously the recipe.

I'm really just interested in some ideas for a cheesecake like filling to roll up in an egg roll wrapper and deep fry. Something that won't leak out.

There's cheesecake filling available next to the cream cheese in the grocery stores. I don't know about the rest of the recipe, but that would give you a start without having to actually make a cheesecake or destroy one.
 
TexasPete, I do not believe flour is an ingredient in any cheesecake recipe.

The easiest no bake cheesecake calls for 8 oz room temp cream cheese, 1 can sweeten condense milk (eagle brand), 1/2 cup lemon juice, and 1 teaspoon vanilla. Mix and place in a graham cracker pie shell, refrigerate for an hour or two until set. Open a can of cherry or strawberry pie filling to spread on the top and your are set.

Now, if you wanted to fry this, I would make my own graham cracker crust in and 9"x9" pan that was lined with parchment paper. Pour the filling on top then top with fruit pie filling. Place in freezer for 30 minutes or so, lift out of pan via the parchment paper, cut into cubes, and return to freezer until firmly frozen. Place cubes in egg roll wrappers, wet edges to seal, and fry til wrappers are done. You could wrap them burrito style in flour tortillas and fry.

Experiment with it and have fun. You could add cocoa to make a chocolate cheesecake. You could add coconut and top with crushed pineapple for a pina colada cheesecake (I would use 1/4 cup of the drained pineapple juice and 1/2 of lemon or lime juice). I might even try a coconut and pecans in a filling.
 
As someone who fries everything, I would recommend using a pre made pie crust (sweet) instead of a tortilla (savory), although they would both work. I would also make sure the filling is at least partially frozen.
