Charro/Pinto Beans

I want to make a big vat of beans with onions, tomatoes, sausage and whatever else comes to mind. I've never made any beans other than ranch style (just open can and heat on stove) so I don't know where to start.

Any hints would be helpful.
 
Here is a good easy recipe

Soak your dried beans overnight. I have found that dumping the water out and rinsing prior to cooking can take some of the gas out (every little bit helps).

1 bag of dried pintos (soaked overnight and rinsed)
1 white onion quartered
1-2 fresh jalapenos (sliced and 1 de-seeded, your preference)
1-3 cloves garlic
ham hock or salt pork
salt
pepper
cumin

In a large pot, add water to cover beans by 1-2". Add onion, ham hock/salt pork, jalapenos, add salt, pepper, and cumin to taste.

Alternately, you can brown the salt pork and ham hock and saute the onion and jalpeno in the redered fat, before you add the beans and water. Your call.

Bring to a boil uncovered, reduce heat to very low and cover. Let simmer for 2-3 hours. Add water if necessary.

Serve on buttered bread and top with fresh chopped onion and tomato. Good stuff. It is really hard to mess this dish up.

We find dumping the water and rinsing after the beans come to their first boil also helps take some of the gas out of the beans. Just saute your veggies, ham, salt pork, sausage or whatever in the pan after you dump the water from the first boil.
 
The first thing done is dump your dried beans on the countertop and look thru them for small rocks and bad/broken beans and remove, then rinse the beans.

We put the beans in a pot of cold water, bring to a boil and turn off to soak for 1 hour. I pour this liquid off and put in fresh water, chopped onion, hamhocks, chopped garlic, pepper and 2T of sugar. Add salt later towards beans being close to ready.
 
take Donny's recipe and add one can Ro-Tel and two beers.

I also use bacon and cook it off a little to carmalize the outside. Not crispy, just done enough that it doesn't fall completely apart.
