Buttermilk Pancakes

I made buttermilk pancakes this morning for the wife and kids. They were very easy and yet WAY better than pancakes from a mix. Just takes a little foresight to make sure you have all of the ingredients, especially buttermilk, which I would not normally have around the house primarily because it tastes horrid.

Anyway, here's the recipe, in case anyone wants to give them a try. It makes enough for 3 adults, maybe 4 if you are having other things for breakfast.

1 egg
1-1/4 cups buttermilk
2 tablespoons vegetable oil
1-1/4 cups flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt

In a mixing bowl, mix together dry ingredients. In another bowl, beat the egg with the wet ingredients. Make a well in the dry ingredients and pour in the wet ingredients. Stir gently until blended. It is OK if it is a little lumpy. Spoon out and cook on a frying pan.

Note: This recipe makes a thick batter. Add a little water for thinner pancakes, if desired.
 
If you don't have buttermilk you can put 1T of apple cider vinegar or lemon juice in 1 C of milk.
 
I married my wife thirty years ago just to get this recipe, and now it is on the internet. We do make our batter more soupy to create moister, less fluffy pancakes. But add more buttermilk, not water. I use around 50% more buttermilk than flour.

Good variations are to add chopped pecans, or raspberries, blueberries, etc. (frozen berries are fine). Another is to substitute whole wheat PASTRY flour for the bleached flour. Don't use regular whole wheat flour or they will be grainy.

Finally, use real maple syrup (not flavored) and butter.
 
That's about how I make 'em, but I add about a tsp of vanilla and use 2 eggs, as well as a stick of melted butter instead of vegetable oil.

Also I separate the eggs and beat the whites until they are foamy but not quite stiff and then fold them in to the rest of the mixed wet/dry ingredients.

Anyone have a recipe for buckwheat pancakes?
 
Try these buckwheat pancakes:

* 1/2 cup whole wheat flour
* 1/4 cup buckwheat flour
* 1/4 cup all-purpose flour
* 1/4 cup quick cooking oats
* 3 teaspoons baking powder
* 1 cup buttermilk
* 3 tablespoons melted butter
* 2 tablespoons honey
* 1 egg, lightly beaten

DIRECTIONS

1. In a large bowl, stir together wheat flour, buckwheat flour, all-purpose flour, oats, and baking powder. Stir in milk, butter, honey, and egg.

2. Heat a lightly oiled griddle or cast iron frying pan over medium heat. Pour an ice cream scoop of batter onto the griddle/pan, using approximately 1/4 cup for each pancake. Brown on both sides, and serve hot.
 
THis is very close to Alton Brown's Good Eats recipe, but he recommends separating the egg, and mixing the buttermilk with the whites, and in another bowl, mix the melted butter (in stead of vegatable oil) and egg yolks, then add the two mixtures together, and pour the combined liquid over the mixed dry ingredients.

There's a reason for all of that, but can't remember what it is. But I can testify to the results.
