2 pintails are all I have to show for my effort Monday morning

We are going to a couple of Brits house tonight and decided to take and appetizer-- orange duck-- first time--- bacon wrapped has always been ok before but I decided to be upscale tonight

18 hrs in marninade-- white wine, orange juice, orange marmelade and 1 tbsp fresh ginger

birds prepped with salt and pepper

4 minutes in skillet with butter to sear

baking dish with more wine and marnelade and fresh orange for freshness

into the oven 400 45 minutes

If you REALLY want to do something in Burnt Orange, get some good olive oil and heat it up almost to smoking with several teaspoons of Annato seed in it. Let it cool and remove the seeds. Use the oil to saute with. Shrimp turn out a really nice orange. Duck probably won't take any color unless the skin is still on.
