They were just on Food Network's Diners and Dives show; they add it as a condiment. They are great, as are all of their burgers. Their verde chile cheese fries maybe the greatest side dish ever created.
Arrrgh, this wasn't supposed to be a Casino El Ecamino thread. Yes they are awesome. I saw the show on Food Network, but i forgot most of what I saw.
I bought some powdered wing sauce mix. I'm going to mix it in with the meat, then make some sauce with the rest.
So, for those that are interested, I mixed in a packet of wing sauce mix (found it next to all the powdered chili, gravy and taco seasoning mixes). I actually used a package of ground Turkey because that's what I had. It tasted pretty good, but not as spicy as I would have liked. The best part was all the juices of the meat mingled with the mix and there was all this flavorful juice dripping everywhere.
Next time I will use actually beef, use the spicier mix (unless someone comes up with a badass homemade mix) and get some real bleu cheese instead of using sour cream.

I don't have a recipe but the best I've had are from a meat market in Hamilton, TX called Wenzel's Lone Star Meats. They add some ground bacon to the buffalo meat to add a little fat because the buffalo is extremely lean. They sell them pre-made in their store and they are incredible.
Wenzel's is located on the north side of the square in Hamilton, one street to the north. Also, I'm on his e-mail list and they will have a booth at the Pecan Street festival here in Austin this weekend if you want to sample.
OMG, ground bacon added to any type of ground meat made into a burger sounds like a winner. I am surprised someone has not used this blend in some of the hamburger competitions.
UTDad: I don't know how he does it but I'm guessing he grinds a slab of bacon and adds it to the ground buffalo prior to cooking. Next time I'm up in Hamilton, I'm going to ask him because I've wondered myself. Kent's burgers are outstanding and I love all his German rings, wurst and smoked cheeses.
