I was thinking about smoking a brisket for Sunday around noon, but my day on saturday is kind of problematic. Heres what I was thinking of doing, let me know what you think-
- Saturday Morning (around 6 -7am) start smoking the brisket (10-12#) until around 1 or 2.
- I will have to leave around 2pm until around 10pm-midnight. So I was thinking of taking the brisket off the smoker at 1 or 2pm, wrap it and throw it in the oven off. When I return at midnight, turn on the oven until 10am the next day. Need it ready for around noon on Sunday.
That seems like enough cooking time, just curious about the time gap in between smoking and oven
