I would have put some cheese on it, but I didn't have any. Nothing too special, fancy, or difficult here, but I thought I'd share.
 
am I the only one who doesn't want potatoes in my breakfast scrambles or breakfast tacos?

I like potatoes, but man, I really hate them mixed with my eggs, etc. Am I weird on this or do more people agree with me?
 
Gosh. I have bad gastrointestinal reactions to biscuits and sausage gravy in the morning. I can only imagine the carnage if I had THAT for breakfast. Looks good though.
 
Potatoes are okay, but I don't like them soaking in runny egg. Cook the egg entirely separately from the potatoes. Then add them together at the end.
 
I like potato in my scramble, but only well cooked. I rarely order them when out for that reason. For me browned potatoes and caramelized onions & peppers are the foundation of a good scramble.
 
Soyrizo? I'm sure that it's healthy and it probably tastes pretty good, but after making my bones in a million taco joints in San Antonio, the concept of soy chorizo just doesn't seem right. People get their danders up on this board for things like beans in chili and condiments on burgers, but I'm going to have to draw my line in the sand on soy chorizo. Just give me the myocardial infarction and whatever unknown and creepy things that comprise real chorizo, thank you.
 
I actually had penned a post they was just: "Soyrizo?" and then remembered that I had just posted about the inane drivel about BBQ sauce being sacreligious, etc. I guess most of the distinctive flavor of chorizo probably comes from the spices, but pork butts, pork salivary and pituitary glands (which are often used in chorizo) seem so different from soy that you would think that you can't really call it "soy chorizo". It's maybe just "soysage" or something like that.

scrambled eggs just are subtle to me and when I'm wrapping them with a tortilla, I don't need a bunch of other starch with them.

i do love some good crispy hash browns with fried eggs over easy. mmm mmmm
 
"Tacquitos" = "little tacos"

"Breakfast tacos" = "breakfast tacos"

Been eating them my whole messican life. As I was getting dressed for school, my mom's standard question was "what kind of breakfast taco do you want today?" Never heard them called tacquitos until the gringos started eating them.

Oh, and my standard choice was chorizo con huevo. But occasionally, bacon and egg. Or sausage and egg (cheese on both of those, too). I do love me a good potato egg and cheese taco as well, but mom didn't make those on a weekday (the taters take too long to cook).

Oh, and actually, the soyrizo isn't bad. The "protein" in regular chorizo is so unrecognizeable, and the spices so strong, that using soy as a substitute really isn't that noticeable. Not a bad way to trim a little bit of fat, if you are so inclined. And this coming from an avowed carnivore.
 
Great thread. Great photos. My thoughts:

1) I like my potatoes on the side, not in the taco.

2) Taquito was used by the white man to try and sound Mexican, but taco works

3) Soyrizo? Might have to try that.

4) MaxBarnes - did you eat that entire plate by yourself? Damn. That's enough for a family.
