What are "breakfast burritos?" I know that coming from San Antonio makes me a snob about Tex-Mex. Breakfast tacos. Breakfast tacos. They eat burritos in New York City.
A breakfast burrito is when you take about 2 or 3 eggs, add potatoes, bacon and/or sausage, some cheese, some beans, maybe green onions and/or salsa and put them on a large tortilla and then roll the tortilla into a shape that looks like a Quart Can of beer.
A breakfast taco is when you take 1 egg and then one other ingredient and you put it in a small tortilla and fold it in half.
Being from El Paso and going to Cd Juarez often I know alot about breakfast burritos. There really is nothing in Austin that can compare but there are a few passable taco places.
In Juarez they have dedicated burrito stands, nothing but burros. For breakfest you can get:
Chorizo con pappas
Chorizo con huevos
Tozino con huevos
rajas con huevos
rajas con queso
Chicharrones con chile
picadillo
chile relleno
and like 10 other varieties.
All will have beans unless you ask them not to put beans on.
I am getting 2 migas tacos at Mi Madres tomorrow before the 11am UCF game.
People will shutter when I say this but the chopped beef & egg breakfast tacos at Rudy's are amazing. Oh my. It reminds me of a Texas BBQ version of chorizo & egg.

For a breakfast Taco, I think Dan's Hamburgers is unbeatable... I'm pretty sure when you order one w/ eggs, bacon, potatoes, and cheese they put free crack in it.
Shortly after I moved out here, some people at the office took a breakfast order for a place down the road that delivers. I wrote down what I wanted and stepped out for a smoke. When I got back in I realized they hadn't called the order in because I wrote that I wanted a chorizo, egg and cheese breakfast taco. They were unsure exactly what I wanted. I had to clarify that I wanted a breakfast burrito. That being said, Ken's, hands down. Used to work down the road from there, and it was an every-morning trip for a year. Chorizo, egg, bacon, bean and cheese! Oh how I miss home.
