I rub the roast with a mixture of kosher salt, crushed garlic and cracked black pepper. Coat it pretty heavy and let sit in the fridge for about 3 hours or overnight. Then put in the oven preheated to 500f. Close the door and turn the oven off. Don't open or check for 5 or 6 hours for medium rare. After you take it out let it cool for a bit then scrape off the excess salt and slice.
