Bought a Big Green Egg yesterday....

the big one, which I think is 24 inches, built into the wooden cart. I told my fiancee about them a while back and she saw one at Salvation Armyt. We went out saturday and I purchased it for $119. It shows some use, but is in pretty good condition. So tell me smoking gurus, how do I cook the perfect brisket on this thing?
 
Thanks. I'm a smoker novice so bear with my questions. I've read on the net that I'm to use lump charcoal with this thing. Where do you buy lump charcoal? Can you get it at the grocery store?
 
I've had an egg for 5-6 years now and love it. And you got a freaking steal. Regular cost of the large is in the $600 range without the cart.

Don't think of it just as a smoker. I use it to grill everything; make great pizza and bread on it (the ceramic walls act as a hearth/brick oven); and can smoke on it. I can smoke ribs or brisket at 200 and put a steak on at about 800 to sear it. It's the most versatile grill out there.

Go to the big green egg website and check out the forum. They'll answer every question you ever had.

I don't know where you are, but they have "eggfests" all over the country where you can meet people, eat, drink and exchange ideas. The Texas Eggfest will be on Lake Travis next month so you might check into that.

You can get lump almost anywhere. Here in town, I know you can get it at Central Market, Whole Foods, BBQ Outfitters, and BBQs Galore. By the way, if you need help or accessories, I recommend BBQ Outfitters. The people at BBQ Galore are clueless about how to use the egg. I've also heard some people get it from Walmart, but I haven't bought any there.

Couldn't agree more. BBQ Galore blows. I have the large version of the Big Green Egg and paid about $700 for it, so you did get a great deal (they should last forever). As far as a brisket goes, cook it like you would in a regular smoker...long and slow. I use a v-rack to catch the dripping fat and then baste it with the drippings. Otherwise it tends to fall into the charcoal and extinguish the fire.
 
I rescued a 25yo Egg from my parents' house a couple of months ago. I'm still learning to use it but it's been a lot of fun. I'll second the recommendation on the BigGreenEgg site. The people there are super friendly and you can get an answer to just about any question you have about your Egg.
