The Boom Boom enchiladas are one of the main reasons I go to Chuy's on Friday. That and the free nacho bar.

I noticed this post and thought you might be interested in my recipe. I can't have wheat so I use corn tortillas, but for the rest of my family I use the flour. If you are in to cooking, maybe you will like the recipe. It is similar.

My version of Chuy's Chicka-Chicka Boom Boom Enchiladas
