aren't refried beans or spanish rice. Or if they are, they can't be they normal way.

* 4 large sweet potatoes
* 1/2 cup honey
* 1/2 cup butter
* 1-2 dashes cinnamon (optional)

Preparation:


Peel sweet potatoes and cut them into approx. 1 inch cubes. Place them in a buttered oven-safe dish, cover and bake for 45 minutes at 375 degrees. Then remove and top with the remaining butter, honey and cinnamon. Bake uncovered for an additional 10-15 minutes.



Also, chili corn. It's great to grill it on the cob, but if you don't have a grill you can make it like this:



* 16 oz bag of frozen corn -or- 2 cans, drained
* 1 small can of roasted red chiles, finely diced
* 1/4 teaspoon cumin
* 1 teaspoon chile powder
* 1 teaspoon serrano chile, finely diced
* 1 tablespoon oil
* salt to taste

Preparation:

Heat oil in a large saucepan over medium heat. Add in corn and let it heat for 5-10 minutes. Sprinkle in seasonings and chiles and cook for an additional 5 minutes. Salt to taste

I like to throw in some lime juice with about two minutes left in the cooking.
 
Southwestern Guac.

Get a can of corn and drain. Mix half a can of corn with two avocados, cumin, and garlic salt.
 
My Mom makes some stuff called Mexican Caviar. It is basically 1 can of black beans, 1 can of corn, some diced up tomatoes and then some vinegar and olive oil (I believe). Salt & pepper to taste. It can be eaten standalone or as a dip.
