Best chicken breast dish? Suggestions?

Anybody have some good suggestions on how to make some tasty chicken breast? I'm not exactly sure what I should do with it.
 
I usually pound them flat down with a rolling pin then season with salt & pepper.
Combine bread crumbs, parm cheese and whatever fresh herbs you like. Dredge chicken through an an egg wash, then coat with dry mixture.
Brown slightly in olive oil both sides. Just brown, don't cook through. Probably 2-3 mins a side. The put in 350 degree oven until done (about 20-25 minutes).

You can add white wine, flour and lemon juice to the drippings to make a good sauce.

I have several different recipes for various chicken and rice dishes that I love.. saffron rice and chicken, sante fe chicken, an East India Chicken (curried with craisans)... I like all of those... Then you could also use bacon, japs, and cheese and grill the chicken breasts that way....

I also posted a salsa on here with black beans, rotel, green onion, corn, cilantro.. .some other stuff... that is EXCELLENT with a chicken breast served over it with jack cheese....

I have more recipes ideas, so if any of those sound good just PM me for specifics....
 
i eat about 5 to 6 lbs of chicken a week for the past few years now. i do this for protein reasons, but because of my massive consumption i have cooked it about every way possible (i think) until i am sick of it and move on to other things.

my latest favorite ,which is easy as hell i might add, is to grill the chicken as normal (seasoning salt, pepper). on the last flip (about 7 minutes before taking it off, i add some precooked bacon, huge slice of tomato, and a fat slice of mozzarella on top... and maybe some garlic.

so easy, and so good.

Just a suggestion, but if you are trying to eat a high protein healthy diet then might I suggest tuna? You might not like fish, or you might eat a ton of tuna... anyway, I try to get high healthy protien, and tuna is just about the best.
 
Olive oil, kosher salt, ground black pepper. Marinade in ziploc bag for at least an hour. Throw on the grill - high heat - 6 minutes on each side.

Also, if you're looking for different types of marinades just about any salad dressing will work, just marinade it a little longer from cream based dressing.
 
yeah, i used to eat tuna. in fact, i ate so much tuna that i will never eat it again unless it is sushi. seriously, i have probably eaten over 1000 cans of canned tuna. when i first started working out and didn't know much about cooking, that was the deal.

i do enjoy fresh tuna though.
 
One to one mixture, Terryaki and Pineapple juice, let sit for a couple of hours or while it thaws, grill over Mesquite charcoal. Simple and easy.
